Naptime Egg Bites

These egg bites are seriously SO good and ridiculously easy to make with only 4 ingredients because honestly, that’s about the maximum amount of effort I can commit to before it’s time for schoolwork. Each little bite packs around 10g of protein for only about 100 calories, making them the perfect macro-friendly breakfast for busy moms surviving off reheated coffee and pure determination. The best part is you can throw in basically anything hiding in your fridge. Add spinach for some extra micronutrients and to convince yourself you have your life together, or toss in peppers, cheese, bacon, and whatever leftover veggies are on their final warning before becoming a science experiment.

Egg Bite Ingredients

Serving Size 1 Bite / 107 cal: 10 g protein / Makes 12 Egg Bites

  • 7 Eggs

  • 1 Cup Low-Fat Cottage Cheese

  • 1 Cup Shredded Cheese

  • 1 Pack of Turkey Pepperonis (140g)

  • Season Like You Mean It!


How To Make

  1. Preheat oven to 325°

  2. Crack eggs into a bowl and add cottage cheese.

  3. Rip up the pepperonis with scissors or your hands and toss them in.

  4. Add cheese and seasonings measured entirely with your heart.

  5. Pour mixture into a silicone muffin pan (grease if you want, but mine never needs it).

  6. Fill all 12 spots evenly. A 1/2 cup scoop helps a bunch with this!

  7. Add a pan of water to the bottom oven rack, then place the muffin pan on the middle rack.

  8. Bake for 25 minutes until golden tops.

  9. Let cool, then store in an airtight container for 3 to 4 days… but in my house, they get eaten pretty quick!
